Super Easy Lentil & Hummus Wrap

I absolutely love wraps- you can quickly stuff a ton of food in them and they just roll up into a clean and easily transported meal.  Perfect for work.

This super easy wrap consists of the following ingredients:

  • 1 whole grain, high fiber wrap
  • 1/4 cup of canned lentils
  • Red peppers, chopped
  • Salad herb blend (parsley, red onion, chives, shallots, garlic, dill)
  • Hummus

I also recommend putting spinach on it.

Sorry for the lame title, folks, I am exhausted and incredibly uncreative at this moment (long day at work followed by a long workout).

The title of this entry pretty much says it all about the food: this recipe contains black beans and mangos in a wrap!  I am telling you, though, this wrap is absolutely phenomenal and super easy.  Perfect for summer!  I had it for lunch yesterday and wanted seconds and thirds.  I might make this wrap for lunch tomorrow, too.
