Super Easy Lentil & Hummus Wrap

I absolutely love wraps- you can quickly stuff a ton of food in them and they just roll up into a clean and easily transported meal.  Perfect for work.

This super easy wrap consists of the following ingredients:

  • 1 whole grain, high fiber wrap
  • 1/4 cup of canned lentils
  • Red peppers, chopped
  • Salad herb blend (parsley, red onion, chives, shallots, garlic, dill)
  • Hummus

I also recommend putting spinach on it.

Oh my, now that’s a tasty burger!

I woke up (rather late) this morning to the vibrations of thunder reverberating throughout the apartment.  There is a torrential downpour occurring outside – complete with a local tornado warning – so there is absolutely no way I am leaving the apartment anytime soon!  It is the perfect opportunity to upload backlogged pictures recipes and tremendously update this little blog.

This veggie burger recipe comes from 101 Cookbooks, one of my favorite cooking blogs.  I was feeling thrifty yesterday and wanted to cook something that I could save in the refrigerator or freezer for a busy night in which I don’t have the energy to cook.  I was going to cook my usual black bean burgers but, alas, that damn pantry is still super low.  I will have to remedy this situation soon.  Maybe when it stops raining.  Anyway, I went in search of a burger recipe that didn’t involve black beans and, voila, I stumbled across this recipe from 101 Cookbooks.

Black Bean and Mango Wrap

Sorry for the lame title, folks, I am exhausted and incredibly uncreative at this moment (long day at work followed by a long workout).

The title of this entry pretty much says it all about the food: this recipe contains black beans and mangos in a wrap!  I am telling you, though, this wrap is absolutely phenomenal and super easy.  Perfect for summer!  I had it for lunch yesterday and wanted seconds and thirds.  I might make this wrap for lunch tomorrow, too.

‘Cado’ ‘n’ Cuc’ Sandwich

This is not a recipe, per se, but rather instructions for making a darn tasty sandwich!

Guac Sandwhich

My lunch today consisted of one of the above sandwiches.

Ingredients for One Sandwich

  • 1 whole wheat, organic English muffin, toasted
  • 3 or 4 pieces of spinach
  • 3 or 4 slices of a peeled cucumber
  • 4 slices of avocado

Josh put cheese on his sandwich, which he said he really liked.

Tip: put the avocado on the top layer- the sandwich will be unstable if your put them lower on the sandwich.

Yes, every bite of an avocado is packed with fat and calories, but it is not bad fat. The nutritional benefits are outstanding!

I put the left over slices of avocado in a bag with lime juice so they will stay fresh.  Thinkin’ about making some tasty guacamole tomorrow!
