Black Bean and Mango Wrap

Sorry for the lame title, folks, I am exhausted and incredibly uncreative at this moment (long day at work followed by a long workout).

The title of this entry pretty much says it all about the food: this recipe contains black beans and mangos in a wrap!  I am telling you, though, this wrap is absolutely phenomenal and super easy.  Perfect for summer!  I had it for lunch yesterday and wanted seconds and thirds.  I might make this wrap for lunch tomorrow, too.

  • 1/4 cup black beans, rinsed and drained
  • 1/2 tsp lime juice
  • 1/4 tsp cumin
  • 6 pieces of spinach
  • 1/2 of 1 mango, sliced
  • 1/2 medium sized onion, diced
  • Small handful of brussel sprouts
  • 1 high fiber, whole grain wrap


  1. In a small bowl, mix the black beans, lime juice, and cumin.
  2. Lay out a wrap and line it with spinach.  Top it off with the black bean mixture and the other ingredients.
  3. Roll up the wrap and devour!

Those weren’t even directions.  It is so easy that you just mix, drop, roll, and eat!  If you only make one wrap, then you will have mango left over that you can eat on the side.  What a perfect lunch!
